Crispy Zucchini, Chickpea, & Cauliflower Street Tacos Recipe

  1. Preheat oven to 375 degrees.
  2. Place parchment paper on a large sheet pan
  3. In a bowl, place diced zucchini, some olive oil, and 1 teaspoon of taco seasoning. Mix well and place on prepared sheet pan.
  4. In a bowl, place diced cauliflower, some olive oil, and 2 teaspoons of taco seasoning. Mix well and place on prepared sheet pan.
  5. In a bowl, place chickpeas, some olive oil, and 2 teaspoons of taco seasoning. Mix well and place on prepared sheet pan.
  6. Roast the vegetables for 12-15 minutes, until golden brown.
  7. Serve with your choice of toppings and garnishes in tortillas to make street tacos.
