Vegetarian Cauliflower Tacos Recipe
- Cauliflower on cauliflower… Doesn’t get much better than that. Our Cauliflower Tacos are the perfect addition for taco night. Plus, they’re vegetarian.
Ingredients
- 1 pkg. Cauliflower and Corn Taco Shells
- 1 head of cauliflower (purple or traditional), chopped and trimmed
- ½ head of red cabbage, shredded
- 2 tbsp. cilantro
- 1 lime, cut into wedges
- 1 bell pepper, sliced thinly
- ½ c. Ortega® Black Beans
- ½ c. sour cream
- ½ c. Medium Taco Sauce
Directions
- Roast the cauliflower in a 350 degree oven for 15-20 minutes
- Mix the sour cream and Taco Sauce with a whisk
- Heat taco shells according to packaging directions
- Assemble the tacos with the cauliflower, cabbage, bell pepper, and beans
- Finish with the sour cream taco sauce, cilantro, and lime
