Beef Enchiladas Recipe

Ingredients

  • 2 lbs Ground Beef
  • 2 Packets Ortega Taco Seasoning
  • 1 28oz can Las Palmas Original Red Enchilada Sauce
  • 8 8-inch Ortega Flour Tortillas
  • 3 cups Mexican Blend Shredded Cheese
  • Sour Cream and Cilantro for serving

Directions

1. Pre-heat your oven to 350 degrees and prepare a 9×13 baking dish

2. Brown ground beef until cooked through, add in Ortega Taco Seasoning and cook according to package directions.

3. While the ground beef cooks, pour the enchilada sauce into a large bowl or plate, wide enough to comfortably dip your tortillas in.

4. Working one at a time, dip each tortilla into the enchilada sauce, coating both sides. Lay each tortilla flat, fill with 1/8 of the ground beef mixture and 1/4 c shredded cheese, and roll. Repeat the steps with the remaining tortillas until all tortillas are used.

5. Pour the remaining enchilada sauce over the tortillas and top with the remaining shredded cheese.

6. Bake at 350 for 15 minutes or until cheese is melted and bubbling.

7. Drizzle with sour cream and sprinkle handful of cilantro on top before serving. Enjoy!
