Directions
- Pre-heat your oven to 350 degrees and prepare a 9×13 baking dish.
- Brown ground beef until cooked through, add in Ortega Taco Seasoning and cook according to package directions.
- While the ground beef cooks, pour the enchilada sauce into a large bowl or plate, wide enough to comfortably dip your tortillas in.
- Working one at a time, dip each tortilla into the enchilada sauce, coating both sides. Lay each tortilla flat, fill with 1/8 of the ground beef mixture and 1/4 c shredded cheese, and roll. Repeat the steps with the remaining tortillas until all tortillas are used.
- Pour the remaining enchilada sauce over the tortillas and top with the remaining shredded cheese.
- Bake at 350 for 15 minutes or until cheese is melted and bubbling.
- Drizzle with sour cream and sprinkle handful of cilantro on top before serving. Enjoy!
