Preheat oven to 400 degrees F. Pat dry the fillet of cod before adding to a baking dish. Cover fillet in oil and season with half a packet of Ortega Taco Seasoning or until fish is coated in seasoning. Place fish in oven and bake for 10-12 minutes.
While the cod is baking, in a bowl, mix together diced mango, cucumber, 2 tbsp of chopped cilantro, juice from half a lime and salt to taste.
For the aioli, add sour cream to a small bowl and add juice from half a lime, the rest of the cilantro, lime zest and salt. Mix until combined.
Once fish is done baking, build your tacos with a spoonful of aioli, freshly baked cod, mango salsa and top with sliced serrano peppers or your favorite toppings.
