Slice all Mini Peppers in half, lengthwise. Remove and discard seeds and ribs, arranging them cut side up on a baking sheet as you go.
In a large mixing bowl, combine Cream Cheese, Cheddar Cheese, and Ortega Taco Seasoning.
Evenly fill peppers with the cream cheese mixture.
Bake peppers at 350 for 20 minutes, or until the peppers are soft and the cheese is bubbling.
Remove peppers from the oven and allow to cool slightly before arranging peppers on a serving tray. Top with cilantro and a squeeze of lime before serving.
