Mini Stuffed Peppers Recipe
Ingredients
- 1lb Mini Sweet Peppers
- 1 Block of Cream Cheese, softened
- 1C Shredded Cheddar Cheese
- 1 Packet Ortega Taco Seasoning
- Cilantro, for serving
- Limes, for serving
Directions
- Preheat oven to 350 degrees F
- Slice all Mini Peppers in half, lengthwise. Remove and discard seeds and ribs, arranging them cut side up on a baking sheet as you go.
- In a large mixing bowl, combine Cream Cheese, Cheddar Cheese, and Ortega Taco Seasoning.
- Evenly fill peppers with the cream cheese mixture.
- Bake peppers at 350 for 20 minutes, or until the peppers are soft and the cheese is bubbling.
- Remove peppers from the oven and allow to cool slightly before arranging peppers on a serving tray. Top with cilantro and a squeeze of lime before serving.
