Mexican Chicken Salad Bowls

  • An easy DIY burrito bowl that you won't believe is homemade. Riced Cauliflower is the perfect base for this salad bowl. Assemble with your favorite ingredients and add in Ortega Flavor Craver Taco Ranch Taco Sauce for a mild, creamy ranch flavor.

Ingredients

  • 2 cup shredded cooked chicken
  • 1 avocado, diced
  • 1 cup Green Giant® Steam Crisp Mexicorn, drained
  • 1 cup black beans, rinsed and drained
  • 1 package Green Giant® Riced Veggies Cauliflower, cooked according to package directions
  • 1/2 cup Flavor Craver Taco Ranch Taco Sauce
  • 2 tbsp chopped fresh cilantro
  • 1 Bakeable Tortilla Bowl Kit
  • 2 cup shredded Romaine lettuce

Directions

  1. Combine chicken, Green Giant Mexicorn and beans. Add ¼ cup Ortega Flavor Craver Taco Ranch Taco Sauce and toss gently.
  2. Toss Riced Veggies Cauliflower with 1 tablespoon Ortega Flavor Craver Taco Ranch Taco Sauce and cilantro.
  3. Evenly divide lettuce, chicken mixture and Riced Cauliflower among Ortega Tortilla Bowls. Drizzle with remaining Ortega Flavor Craver Taco Ranch Taco Sauce.
