Mexicana Rice Dish (healthy, low cal and low fat) Can be used also as a main dish and simple to prepare with many, many variations.

Ingredients

  • 1 cup long grain brown basimati rice (can sub. your favorite rice)
  • 2 cups water
  • 1 can Herring (can be tuna, salmon or other favorite)
  • 1/4 cup medium ORTEGA Salsa (can be your favorite)
  • Bag of ORTEGA Corn chips

Directions

Bring water to boil
Add rice
Boil until water has just about evaporated (be sure to stir rice so it won't stick) then add can of Herring and salsa
Let all the water disappear while stirring everything
When rice mixture is finished to your liking, plate in bowl and serve with Ortega Corn chips
