Beef Chimichangas

Once you've tried these homemade chimichangas you're expectations of these fried burritos will never be the same. Crisp and crunchy (not greasy) and filled with tender, savory beef.

Directions

BROWN beef; drain. Stir in water and burrito seasoning mix. Bring to a boil. Reduce heat to low; cook, stirring constantly, for 5 to 6 minutes or until mixture is thickened. Place beef mixture evenly on each tortilla; sprinkle with cheese. Fold into burritos; secure ends with wooden picks.



ADD vegetable oil to 1-inch depth in medium skillet; heat over high heat for 3 to 4 minutes.



PLACE 1 or 2 burritos in oil; fry, turning frequently, for 1 to 2 minutes or until golden brown. Remove with slotted spoon; drain. Repeat with remaining burritos. Remove wooden picks. Serve with salsa and guacamole.

Comments: Definately use a flour/water paste to seal them. My kids don't like really spicy things,so I used one package of seasoning to 2 lbs of beef. Cheddar or Taco cheese works best. Use lots of paper towels to sop up the frying oil. Even my picky child ate them!! I mixed sour cream and salsa to make a dip for them, it was great.

Comments: i made these for dinner 1 night & everyone liked them so much, they keep asking me when i'm gonna make them again. the only bad thing is that i couldn't get the flour tortilla to stay closed when it was in oil. otherwise it's great!

Comments: Great also if you add refried beans first, then beef, then cheese(green chiles too!) Then, make a paste of water and flour and brush on folds to "act as paste" to seal folds!
